Abstract:
At present Jordan has no legislation for the control of the microbiological quality of ice cream. To investigate the bacteriological quality of ice cream in Amman the authors collected 1 sample from each of 37 places, ranging from first-class hotels to supermarkets and retail shops. 27 of the 37 samples failed internationally accepted standards for total counts and 32 failed standards for coliforms, including Escherichia coli. Suspected staphylococci were present in 33 samples and suspected shigellae and salmonellae in 23 of the 32 samples tested. Antonnette A. Wieneke
